I too am vastly entertained by sushi on a conveyor belt. I have also heard of places where there is running water and the sushi goes by on boats.
I've actually never been to a moving-sushi place where the sushi wasn't on little boats in the water. The boats are typically connected together with string, like a little sushi boat train, and float gently past the sushi bar. They're pretty common here in Silicon Valley -- there's a fairly good one just down the street from me in the shopping center by the Safeway. Details at
